I got to take a pretty wonderful run this morning in the sunshine.

I went to clinical afterwards after a nice bowl of oat bran and came home to defrost some homemade tomato sauce made from garden maters. The husband made pasta and sautéed some mushrooms.
I have long been wanting to make tofu tasty and I’m getting closer.
Baked tofu over quinoa with roasted veggies
Strips of tofu marinate and bake really well in soy sauce, which I did here. I also added a little lemon juice and black pepper.I baked it in some sunflower oil at 350 for about 20 minutes. (We like it crispy or close!)
Green bell peppers and onions gave the bowl a nice crunch. Have you had success with tofu marinades?

I’m so glad you enjoyed the tofu. I’m a newbie to tofu too and can’t believe what a great meal you can make of it. I was very dubious, but been changed.
I’m not a huge fan of tofu, as I try and stray away from soy in general- but I am kinda curious to eat some after seeing so many good recipes all over the blogosphere.

Yeah, I try to only eat soy that is non-GMO! I’ve never tried the tofu cuties, but they look tasty!
Wow, that tofu and quinoa dish is making me REALLY want to replicate that immediately. Too bad I fail at making my own tofu.
I need to try again apparently!
