Another BFD!!! (Beautiful fall day)
Here is what I did with the gorgeous butternut squash I picked up from the farmers market. I went to town chopping it into chunks and peeling it. I employed the biggest knife I own and sat on the couch to watch TV while I chopped. My neighbor walked by and I’m sure she was pleased to see me aggressively attacking the squash. When I emerged victorious, I had the following.

I made a quick walnut crumble in the food processor to top the mix and put it in the oven at 350 for 30 minutes.

Ready to taste??

I spotted a great idea on Katie’s blog: Hug-a-Carb month!! The premise is to take a picture of yourself loving on some unsuspecting carb. I went all the way to second base with my carb. Watch out, acorn squashes of the world! I admired it, then hugged it.

Ha! Hug-a-carb… I do that pretty often. I’m looking for a good butternut squash idea for a potluck, this casserole just might be it!
I just hugged my Acorn squash tonight and prepped it for eating it tomorrow at lunch
